Ghottab: Persian Crescent Pastries with Walnut filling

The smell of orange blossoms infuses the backyard and brings memories of our home in Northern Iran. Inside the home, there's a rush to finish up the khune tekooni (Pre-Persian New Year spring cleaning). There are wheat and lentil sprouts by the window growing few millimeters each day until they are ready for the haft seen. If we were in Iran, the streets would've been crowded by people doing their last minute Nowruz shopping, like how crowded it gets prior to Christmas here in the US. But for us, we create the buzz in our little home by making sure that we still keep certain traditions, like painting the eggs, or slaving in the kitchen to make our own samanoo and Persian pastries such as ghottab.
Like many other Persian sweets, ghottab is a sweet infused with rose water and cardamon. Its walnut filling showcases the delicious Iranian walnuts and makes for a perfect accompaniment to the afternoon tea.
As Nowruz is approaching, I wish you a sweet year ahead filled with love, happiness, and prosperity.

This recipe was given to me by my sweet aunt Gohar.

Yields 60 cookies

Ingredients
1/2 teaspoon active dry yeast
1 tablespoon wheat starch
2/3 cup rosewater
5 - 5 1/12 cups flour (700 gr, 25 oz)
2 egg yolks
1 1/4 cup melted and cooled shortening (270 gr, 9 oz)
4 tablespoons yogurt
3 cups walnut (280 gr, 10 oz)
2 cups powdered sugar (200 gr, 7 oz)
2 teaspoons ground cardamom
Vegetable oil for frying the cookies

Directions
In a small bowl mix in the dry yeast with 1/2 cup of lukewarm water and set it aside.
In a separate small bowl mix in the wheat starch in with the rosewater and set it aside.
In a large bowl mix in the flour with egg yolks and melted shortening and break the flour with your fingertips. Mix in the yeast and starch, yogurt and rosewater mixture and knead the dough until a ball forms. If the dough is sticky add some flour if it's dry add in some rosewater.
Place the dough in a bowl and cover with a towel for about 30 minutes.
Meanwhile, in a food processor ground up the walnuts and turn it into a bowl. Mix in 1 cup of the powdered sugar and cardamom.
Roll out the dough on a lightly floured surface and using a 3 inch circle cutter, cut out the dough. Place about 1 tablespoon of the walnut mixture in the center of the dough and fold the dough over so you get a half circle. Pinch the edges and twist the edges to ensure the filling is sealed in.
Repeat with the remaining dough and walnut mixture.
In a large pot over medium high heat, heat the oil and fry the pastries in the oil for about 5 to 10 minutes until they are golden brown. Transfer the cookies to a paper towel lined sheet and let them cool.
Right before serving, roll the pastries in the remaining powdered sugar and enjoy with some hot tea.

Blackberry Cake

The original recipe for this cake goes back to my teenage years, when I had just started cooking and baking. The recipe was handed to us by Giti joon, a family friend who brought the recipe with her from Sweden to Iran. We loved this cake and during summer, we never missed a chance to make it whenever we came by berries. Which was either when we went to our citrus orchard in the outskirt of Sari (the city we lived in, in Mazandaran provide), or on our way to Tehran sold by the farmers by the road.
When I was preparing for my move to the US, I started to organize all my recipes in a little notebook, and that's when I messed up the recipe. Because ever since then, about 13 years ago, I have failed at making the cake each time. But finally after many trial and errors I finally perfected it this time.

Ingredients:
Cake
1 cup fresh or frozen blackberries
2 1/4 cups all purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup whole milk
1 teaspoon vanilla extract
1/2 cup (1 stick, 4 oz, 100 g) unsalted butter, room temperature
1 1/2 cup sugar
3 large eggs
Whipped Cream Topping
2 cups heavy cream
3 tablespoons powdered sugar
Blackberries for garnish

Directions:
Preheat oven to 350 degrees Fahrenheit. Butter and flour a 9-inch round pan.
Puree the blackberries in food processor or blender. Run the puree through a sieve if you don't like the seeds.
In a medium bowl, whisk together flour, baking powder, and salt; set aside.
In a small bowl, mix together milk, vanilla and blackberry puree; set aside.
In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar until light and fluffy, about 3 to 5 minutes. Add eggs one at a time until incorporated into the batter.
With the mixer on low, alternately add flour mixture in 3 parts and milk mixture in 2, beginning and ending with flour mixture; mix just until combined. Spread batter in prepared pan and bake for 35 to 40 minutes, until a toothpick inserted in center of cake comes out clean.
Cool in the pan for 10 minutes; invert onto a wire rack to cool completely.
Using a serrated knife, split cake in half horizontally' place bottom half, cut side up, on a serving plate.
Make topping:
Using an electric mixer fitted with a wire attachment, beat cream until very soft peaks form. Continue to beat and gradually add powdered sugar until soft peaks form.
Top the bottom layer of cake with 1/3 of the whipped cream, cover with top half of cake, cut side down. Top cake with remaining whipped cream, cover the edges and all sides with the whipped cream, and decorate with blackberries.

Iced Melon (Aab Talebi)

One of my absolute favorite summertime drinks is aab talebi (iced melon). It is one of Mr. Dad's specialties! I remember in the hot and humid summer days of Mazandaran (northern province of Iran) nothing would cool our bodies and souls like a large glass of aab talebi. As a teenager I used to be able to chug down 3 large glasses full of aab talebi in one sitting! Now, I don't think I can do that without ending up in the hospital's emergency room.

Serves 2-3 people
Ingredients
1 medium melon (about 1 3/4 lb)
2 cups ice cubes
1/4 cup sugar
1 tablespoon rosewater

Directions
Cut the melon in half, and remove the seeds using a spoon. Remove the skin and cut the melon in cubes.
In a blender, put the cut up melons with the ice cubes, sugar and rosewater. Blend until the ice has crushed. Adjust the sweetness to your liking and serve.

Sweet Peach Olive Oil Cake

I'm a sucker for weird combinations, so when I saw the recipe for this cake on the latest issue of Food&Wine I knew I had to make it.
The olive oil taste was very noticeable immediately after the cake was out of the oven, but the next day I couldn't taste it at all. So If you're curious about making the cake but worried that you might not like it, you should worry no more! If you really loved it just make sure you eat the whole thing on the first day, and if not just save the rest for the next day!

Ingredients
3 ripe peaches, thinly sliced
1 1/2 cups extra-virgin olive oil
1 cup plus 2 tablespoons sugar
1/2 teaspoon kosher salt
3 large eggs
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Sweetened vanilla Greek yogurt or vanilla ice cream, for serving

Directions
Preheat the oven to 350 degrees Fahrenheit. Line a 9-by-13-inch baking pan with parchment paper and coat with vegetable oil spray. In a bowl, toss the peaches with 1/4 cup of the olive oil, 1/4 cup plus 2 tablespoons of the sugar and the salt. Let stand until juicy, about 15 minutes.
In a bowl, whisk the eggs, the remaining 3/4 cup of sugar and 1 1/4 cups of olive oil. In another bowl, whisk the flour, baking powder and baking soda. Whisk the dry ingredients into the egg mixture. fold in the peaches and juices. Scrape the batter into the pan; bake for 35 minutes, until golden and a toothpick inserted into the center comes out clean. Let cool slightly, then serve with ice cream.

Strawberry Cake

Going through my recipe index couple days ago I realized I have posted more recipes for desserts than any other course in this blog. The main reason why I have more dessert recipes here is that I can't finish up a meal without getting my teeth into something sweet. Whether it's a homemade ice cream, a glass of tea with a slice of cake or even some chopped up fruit, I put the seal on my mouth when I had my fair share of sweetness.
This strawberry cake is just what I need when I'm getting closer to dinnertime and I don't have a dessert to enjoy afterwards. It is a very easy cake to make and with strawberries in abundance in this time of the year I can't think of an excuse not to make them more often.

Recipe adapted from Martha Stewart

Ingredients
6 tablespoons unsalted butter, softened, plus more for pie plate
1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup plus 2 tablespoons sugar
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon pure vanilla extract
  • 1 pound strawberries, hulled and halved

Directions

  1. Preheat oven to 350 degrees. Butter a 10-inch pie plate. Sift flour, baking powder, and salt together into a medium bowl.
  2. Put butter and 1 cup sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until pale and fluffy, about 3 minutes. Reduce speed to medium-low; mix in egg, milk, and vanilla.
  3. Reduce speed to low; gradually mix in flour mixture. Transfer batter to buttered pie plate. Arrange strawberries on top of batter, cut sides down and as close together as possible. Sprinkle remaining 2 tablespoons sugar over berries.
  4. Bake cake 10 minutes. Reduce oven temperature to 325 degrees. Bake until cake is golden brown and firm to the touch, about 1 hour (the toothpick doneness trick probably won't work as the cooked strawberries on top will make the top a little soggy, but don't worry your cake is done after an hour) . Let cool in pie plate on a wire rack. Cut into wedges. Cake can be stored at room temperature, loosely covered, up to 2 days.

Rice Stick Granita (Faloodeh)

Mr. Dad taught me how to ride my bicycle when I was nine, I was fourteen when he taught me how to drive his car, I was sixteen when he made me in charge of depositing his pizzeria's cash receipts to the bank, and I was twenty when he let me pack my bags and move back to America all by myself.
My father is an Iranian father, he grew up in a traditional home with traditional Iranian values, and not once in my life he made me feel that had I been a boy I would have had certain privileges that I didn't as a girl. My mother may have pushed me to study hard to succeed in my education in order to become independent by constantly counseling me whenever I got a bad grade, but I would not have become the strong person that I am today if it was not for my father who by his conduct, not his words, made me feel I could achieve anything I ever wanted.
And so, on this father's day I am making his favorite dessert, faloodeh, which is a famous summertime dessert in Iran originally from the beautiful city of Shiraz. Another version of serving this granita like dessert is along a scoop of saffron ice cream in which case it is called makhloot.

I am indebted to my aunt Malak for sharing this recipe with me.

Ingredients
1 quart/liter water
3 cups sugar
1/2 rosewater
6 ounces thin rice stick noodles

Direction
In a medium size saucepan bring the water and sugar to a boil until the sugar has dissolved. Add rosewater, and turn off the heat. Let the syrup cool to room temperature then place in a shallow dish and place in the freezer. Let the syrup freeze for at least 6 hours, preferably overnight.
30 minutes before serving, bring a large pot of water to boil season lightly with salt and add the rice sticks. reduce the heat and let the rice sticks cook for about 15 minutes. Drain the noodles and rinse with cold water until the noodles are cold.
To serve, use a fork to scrape the frozen syrup and gradually add the cooked rice sticks and mix with the granita. Make sure to add the noodles in small batches to ensure they freeze properly. The noodles need to get harden and very white.

Serving suggestion: Faloodeh is served in three ways, by itself, or with a drizzle of lemon or lime juice, or drizzle of sour cherry syrup.

Note: If you are not going to serve the whole thing immediately, you can store the cooked noodles in a container filled with cold water for up to 3 days in the refrigerator. Just drain before serving and mix with the granita.

Tiramisu

The recipe for this tiramisu is from a book which has a very sentimental value for me. During the time that Camera girl and I lived in the States alone, about 10 years ago, we were financially broke, and spending money on things that were not essential to our daily life was not an option. We each held two jobs, we shared a full time job at a drugstore, and on the weekends we worked separately in different stores.
As part of the newly enforced dress code policy in our shared job we had to purchase some black pants. We went to an off-price department store to buy the pants, and while waiting in line at the checkstand, Camera girl started to skim trough this book which she found laying on a shelf. The mouth watering pictures in the book were so tempting to the eyes of this teenager forced to eating her sisters not so great cooking at the time, that she pleaded me to buy it.
The $8 book was a luxury purchase for us at the time, and after years, as our prospects improved so did my cookbook collection. But this book has a special place in my heart, as it reminds me of our accomplishments and the hardship we overcame.

Recipe adapted from The Italian Kitchen

Ingredients
3 eggs, separated
2 cups mascarpone cheese, at room temperature
1 teaspoon vanilla sugar
3/4 cup cold, very strong black coffee
1/2 cup Kahlua or other coffee flavored liqueur
18 savoiardi (Italian sponge fingers)
sifted unsweetened cocoa powder and grated bittersweet chocolate, to finish

Directions

  1. Put the egg whites in a grease-free bowl and beat with an electric mixer until stiff and in peaks.
  2. Mix the mascarpone, vanilla sugar and egg yolk in a separate large bowl and beat with the electric mixer until evenly combined. Fold in the egg whites. Spread a few spoonfuls of the mixture in the bottom of a large serving bowl.
  3. Combine the coffee and liqueur in a shallow dish. Dip a sponge finger in the mixture, turn it quickly so that it becomes saturated but does not disintegrate, and place it on top of the mascarpone mixture in the bowl. Add five more dipped sponge fingers, placing them side by side.
  4. Spoon in about one-third of the remaining mascarpone mixture and spread it out. Make more layers in the same way, ending with mascarpone. Level the surface, then sift cocoa powder over it. Cover and chill overnight. Before serving, sprinkle with more cocoa and the grated chocolate.

Sour Cherry Slab Pie

Whenever I'm making a fruit dessert I can't help but tease my sisters. Startled by the sound of the mixer they jump into the kitchen to check what I'm baking. Then I just say: "bleh...you won't like it, it's a fruit dessert."
For the longest time the only fruit dessert I used to make was apple pie, and even though it is my favorite apple pie recipe it never excited the younger sisters. This made them weary of any fruit desserts and generally cooked fruits. This went on until couple years ago when I was preparing to make the best peach tart. They nagged that why do you like fruit desserts so much and why can't you bake something generic like a chocolate cake or as the sous chef almost always begs a 6 layer cake filled with whipped cream and all sort of goodness. When the baking process was over and the house was filled with the delicious aroma of summer peaches, they couldn't resist and made sure that there was not a single piece left for the next day. That was the end of the complaints, and eventually they began to appreciate the apple pie as well, but I still enjoy teasing them when they ask what's for dessert.
This sour cherry slab pie in my opinion is the best kind of pie you can make with sour cherries, or even regular cherries. The crust to fruit ratio is what I like about it. It has just enough sour cherries for two thin layers of dough. The tartness of sour cherries cut through the buttery crust and make the dessert taste light rather than rich and heavy.

Recipe adapted from Martha Stewart

Yield: Makes 24

Ingredients
6 cups pitted sour cherries (fresh or frozen)
1 to 1 1/2 cups granulated sugar
1/4 cup cornstarch
Juice of 1/2 lemon
Large pinch of salt
All purpose flour, for rolling out dough
Pate Brisee for Sour cherry Slab Pie (recipe followed)
1 egg beaten with a tablespoon of milk
1 cup sifted confectioners sugar
1 to 2 tablespoons milk

Directions
1. Preheat oven to 375 F (180 C) degrees. If using frozen cherries, defrost and drain. In a large bowl, combine cherries, sugar, cornstarch, lemon juice and salt. Stir to combine; set aside.
2. On a lightly floured surface, roll out the larger piece of dough into an 18-by-12-inch rectangle. Transfer to a 15-by-10-by-1-inch rimmed baking sheet, (pastry will hang over sides of pan). Pour cherry mixture into lined baking sheet; set aside.
3. On a lightly floured surface, roll out remaining piece of dough into a 16-by-11-inch rectangle. Drape over filling. Bring bottom pastry up and over top pastry. Pinch edges to seal. Using fork, prick top crust all over. Brush with egg mixure.
4. Bake until crust is golden and filling is bubbling, 40 to 55 minutes. Transfer to a wire rack until just warm to the touch, about 45 minutes.
5. In a medium bowl, stir together confectioners' sugar and mil until desired glaze consistency is achieved. Use a spoon to drizzle over top. Serve warm or room temperature.

Recipe for Pate Brisee for Sour Cherry Slab Pie

Ingredients
3 3/4 cups all-purpose flour
2 1/2 teaspoons coarse salt
1 1/2 teaspoons sugar
1 1/2 cups chilled (3 sticks) unsalted butter, cut in pieces
6 to 12 tablespoons ice water

Directions
1. Place the flour, salt, and sugar in the bowl of a food processor, and process for a few seconds to combine. Add the butter , and process until the mixture resembles coarse meal, about 10 seconds. With the machine running, add the ice water in a slow, steady stream, through the feed tube, just until the dough holds together. Do not process for more than 30 seconds.
2. Turn the dough out onto a work surface. Divide in two with one piece slightly larger than the other. Place each half on a sheet of plastic wrap. Flatten, and form two rectangles. Wrap, and refrigerate at least 1 hour before using.

Saffron Pistachio Ice Cream

I wonder if my mom still gets upset when I murmur my plans for buying my own place and moving out. I don’t see her teary eyes anymore (knock on wood) when I mention my plans and draw my timeline for buying a house. Is it because she doesn’t love me anymore, or is it for the fact that I’ve slowly occupied her kitchen. Since she still pets me like I’m still her cute little 3-year old, I would say that the latter case is more probable.

Right about when I created that timeline for buying my own nest, I started to prepare myself for my own kitchen. The master (aka mom) herself encouraged me into buying them. I started from plates and then moved to baking trays and silicone baking sheets, and then now all of a sudden to kitchen electronics. I mean which self claiming pastry chef can survive without a stand mixer, and all of the attachments that come with it!? And she still supported me, even giving me ideas on where to store them. So slowly our kitchen cabinets have been topped with my new obsessions, and God only help us if we ever had an earthquake in this earthquake prone California of ours!

What the master did not foresee was the fact that this self-claiming pastry chef was not going to settle on these equipments sitting on top of the cabinet. So I started using everything I had purchased. And well, when you bake you need a whole bunch of ingredients from your typical butter, flour and sugar to variety of nuts, dried fruits, different types of chocolates and so on. So I crawled into the pantry. And then, I thought that since it’s summer and I have a nice stand mixer with an ice cream maker as an attachment, why not get on an ice cream making marathon, so I packed the refrigerator with heavy creams and half and half which are eventually moving to the freezer in the forms of banana ice cream, raspberry ice cream, mango sorbet and every Iranian’s favorite ice cream, Saffron and pistachio ice cream. (I got so crazy the first week I made 6 different ice creams in a week).

My freshly made ice creams are now sitting in tight spots in both of master’s freezers next to the containers of chicken broths I made couple months ago, and the gigantic ice cream freezer bowl which needs to be in the freezer at all times, because God forbid I think of a flavor and my machine is not ready.

Recipe adapted with some changes from David Lebovitz' The Perfect Scoop
I made very minor changes to make this dessert Persian. I added a tablespoon of rosewater, 1/4 cup of slivered pistachios, and frozen pieces of cream. I also grounded the saffron instead of using saffron treads.
Makes about 2 cups (500 ML)

Ingredients
1/2 cup (125 ml) whole milk
1 1/4 cup (310 ml) heavy cream, divided
1/2 cup (100 g) sugar
Scant 1/4 teaspoon ground saffron
3 large egg yolks
1 tablespoon rosewater
1/4 cup lightly toasted pistachio slivers

Directions
Pour 1/4 of the cream in a thin layer into a flat plate and place it in the freezer until a 1/4-inch frozen creamy crust forms.
After the cream got frozen and hard, break the sheet of hardened cream into small pieces, return to freezer.
Warm the milk, remaining 1 cup cream, and sugar in a small saucepan. Remove from the heat and add the saffron. Pour into a small bowl and steep in the refrigerator for 4 hours.
Strain the saffron-infused mixture into a medium saucepan. Rescue the threads of saffron and put them in a medium bowl. Set the strainer over the top.
Rewarm the saffron-infused mixture. In a separate medium bowl, whisk together the egg yolks. Slowly pour the warm saffron mixture into the egg yolks, whisking constantly, then scrape the warmed egg yolks back into the saucepan.
Stir the mixture constantly over medium heat with a heatproof spatula, scraping the bottom as you stir, until the mixture thickens and coats the spatula (be careful not to boil). Pour the custard through the strainer and stir to incorporate the saffron threads. Stir in the rosewater. Stir until cool over an ice bath.
Chill the mixture thoroughly in the refrigerator, then freeze it in your ice cream maker according to the manufacturer's instructions. Be sure to scrape off any saffron threads stuck to the dasher and stir back into the frozen ice cream. During the last 5 minutes of churning add the toasted pistachio silvers and frozen cream pieces.

Chickpea Shortbreads

These are the most popular sweets baked and served during Nowruz to the visiting guests.
Because for the 13 days following the New Years everyone is busy visiting relatives or hosting guests, the special New Year sweets are normally prepared and stored at least few days prior to the New Years. So I know I'm late in posting this recipe, but I couldn't wait until next year to share them with you. After years of trying recipe after recipe, practicing different techniques and using any "magic" tip that we were told to use, the Master (aka mom) and I finally perfected these cookies.
The moment of truth was on the eve of the New Year, March 19th, exactly at 11:37 PM. I took a sample from the baking sheet which I had patiently waited to cool completely, and I couldn't believe that we finally did it. As soon as I took the first bite, it melted in my mouth, exactly what we were hoping for.
Making these cookies are very labor intensive which is why we were not allowed to eat them as much as we liked to when we were kids.
During the first two days of the New Years when we spent the entire days at my grand parents' house along with my cousins; to get out of our parents' way we would confine ourselves in the room next to the living room where my grandparents would receive their guests. Any time we heard a group of guests leaving and our parents walking them to the door, we would sneak out of the room and run to the table to grab some of these delicate cookies.
I am indebted to my aunt Gohar for giving me her lovely recipe.

Ingredients
2 cups powdered sugar
2 cups vegetable shortening
4 1/2 cups chickpea flour
2 egg yolks
Ground pistachios for decoration

Directions
Preheat oven to 300F. Place the oven rack in middle.
Whisk together the powdered sugar with vegetable shortening for 10 minutes. Add egg yolks one at a time and whisk to combine. Add chickpea flour and knead for 10 more minutes. Carefully roll out to a thickness of 1/2 inch and cut out into tiny shapes (the traditional shape is a four-leafed clover) and place on a baking sheet lined with parchment paper.
Decorate with ground pistachios, and bake in oven for 30. Let cool completely, then carefully arrange on a plate.

Mexican Hot Chocolate

The best way to end a stressful week in my world is drinking a cup of hot chocolate. Add a comforting soundtrack of contemporary Iranian music mixed with the sound of rain pouring outside, and you'll have yourself a very relaxing setting that will wash away all the stress which have been accumulated during the week.
I have tried many recipes for hot chocolate, and nothing really satisfied me until I came across David Lebovit's recipe for hot chocolate. His suggestion of adding unsweetened cocoa powder did the trick and took away the extra sweetness that made me wary of hot chocolates.
I doubt that Mexican sweet chocolate can be found in Iran, so I played with the recipe a little and found a way to substitute for the Mexican sweet chocolate. Here I'm sharing with you both versions.

Yields about 3 cups
2 cups whole milk
4 tablespoons unsweetened cocoa powder, natural or Dutch processed
Pinch of salt
3 ounces Mexican sweet chocolate, chopped*

*Instead of Mexican sweet chocolate, you can use 2 ounces of bittersweet chocolate with 2 tablespoons sugar, and a pinch of cinnamon

In a medium saucepan, heat the milk with the cocoa powder and salt, whisking constantly until it comes to a full boil.
Remove from heat and add the chocolate, whisking gently until it’s completely melted. If desired, blend the mixture with an immersion blender until smooth. (If you chop your chocolate in small pieces you won't really need to use a blender)
Serve warm.
