Chickpea Shortbreads نان نخودچی

These are the most popular sweets baked and served during Nowruz to the visiting guests.
Because for the 13 days following the New Years everyone is busy visiting relatives or hosting guests, the special New Year sweets are normally prepared and stored at least few days prior to the New Years. So I know I'm late in posting this recipe, but I couldn't wait until next year to share them with you. After years of trying recipe after recipe, practicing different techniques and using any "magic" tip that we were told to use, the Master (aka mom) and I finally perfected these cookies.
The moment of truth was on the eve of the New Year, March 19th, exactly at 11:37 PM. I took a sample from the baking sheet which I had patiently waited to cool completely, and I couldn't believe that we finally did it. As soon as I took the first bite, it melted in my mouth, exactly what we were hoping for.
Making these cookies are very labor intensive which is why we were not allowed to eat them as much as we liked to when we were kids.
During the first two days of the New Years when we spent the entire days at my grand parents' house along with my cousins; to get out of our parents' way we would confine ourselves in the room next to the living room where my grandparents would receive their guests. Any time we heard a group of guests leaving and our parents walking them to the door, we would sneak out of the room and run to the table to grab some of these delicate cookies.
I am indebted to my aunt Gohar for giving me her lovely recipe.

Ingredients
2 cups powdered sugar
2 cups vegetable shortening
4 1/2 cups chickpea flour
2 egg yolks
Ground pistachios for decoration

Directions
Preheat oven to 300F. Place the oven rack in middle.
Whisk together the powdered sugar with vegetable shortening for 10 minutes. Add egg yolks one at a time and whisk to combine. Add chickpea flour and knead for 10 more minutes. Carefully roll out to a thickness of 1/2 inch and cut out into tiny shapes (the traditional shape is a four-leafed clover) and place on a baking sheet lined with parchment paper.
Decorate with ground pistachios, and bake in oven for 30. Let cool completely, then carefully arrange on a plate.


هیچ نوروزی نیست که من به یاد خاطره های مختلفم در مورد نان نخودچی نیافتم. از همه واضح تر خاطره روزهای اول عید خونه پدر بزرگ پدریم هست که همه بچه ها تو اتاق کنار پذیرایی جمع میشدیم که جلو دست و پای بزرگتر ها رو نگیریم. تقریبا تمام روز رو تو اون اتاق میگذروندیم. پدربزرگم بزرگ فامیل بود و لحظه ای نبود که بدون مهمون نباشیم، یک سال از تعداد مهمونها تو دو روز اول آمار گرفتیم که بدون اغراق به بیش از ۴۰۰ نفر رسیده بود. خلاصه ما تو اون اتاق خودمون رو حبس میکردیم، پیک نوروزی حل میکردیم، سر به سر هم میذاشتیم و برنامه رادیویی درست میکردیم و صدای خودمون رو ضبط میکردیم. هر وقت چند ثانیه بدون مهمون بودیم، به خصوص موقعی که بزرگترامون داشتن مهمونها رو بدرقه میکردن از تو اتاق یواشی میومدیم بیرون و چند تا نان نخودچی کش میرفتیم.
میدونم دارم دستور این نان نخودچی رو یک کم دیر میذارم، ولی انقدر از نتیجه این شیرینی پزی امسال راضی بودم که دلم نیومد تا سال دیگه دستورش رو نذارم.
امیدوارم که تا به حل عید خوبی داشتین و از این به بعدش هم سالی خوب و پر از شادی باشه براتون.

مواد لازم
پودر قند ۲ پیمانه
روغن جامد ۲ پیمانه
آرد نخودچی ۲/۱ ۴ پیمانه
زرده تخم مرغ ۲ عدد
پسته رنده شده برای تزیین

طرز تهیه
فر را روی درجه ۳۰۰ فارنهایت یا ۱۵۰ سانتیگراد روشن کنید تا گرم شود و پنجره را روی طبقه وسط بگذارید.
روی سینی فر کاغذ روغنی بکشید.
روغن را با پودر قند برای ۱۰ دقیقه بزنید تا کاملا سفید شود. زرده های تخم مرغ را یکی یکی اضافه کنید و خوب مخلوط کنید. آرد نخودچی را اضافه کنید و با دست خمیر را حدود ۱۰ دقیقه خوب ورز دهید. خمیر را روی یک سطح صاف به قطر ۵/۱ سانتی پهن کنید و قالب بزنید. اگر خمیر خیلی چسبنده بود کمی آرد نخودچی زیر و روی خمیر بپاشید.
شیرینی ها روی سینی بچینید و روی آنها را با پسته چرخ شده بپوشانید و بگذارید برای ۳۰ دقیقه بپزد.
بگذارید شیرینی ها کاملا خنک شوند بعد آنها را توی ظرف بچینید.

    چون الان از فر در اوردمش اومدم ازت تشکر کنم البته هنوز سرد نشده نمیدونم چه جوری بشه اومیدارم زود متلاشی نشه.ولی فرمشو خیلی عالی حفظ کرد .
    یکمی تو قالب زدن مشکل داشتم فقط
    میخواستم به لطفی بکنی پیمانه هارو به گرم بگی.
    من نصف کردم مواد. آرد نخودچی 300 گرم و روغن رو کمتر از استاندارد 200 گرم استفاده کردم. البته روغن جامد قنادی زدم.(میدونم که ضرر داره ولی الانه همه روغن جامدا حالت نیمه مایع هستن)

  9. معصومه عزیز، میدونم خیلی شیرینی پر دردسری هست. امیدوارم نتیجه زحماتت ثمر داشته و خوب از آب در اومده باشن. من امسال وقت نکردم شیرینی نوروز رو خودم درست کنم ولی در اولین فرصت که درست کردم حتما اندازه ها رو به گرم میگیرم و اینجا پست میکنم. سال نو مبارک.
