Apple Pie پای سیب

Thanksgiving is by far my favorite American Holiday. It doesn't relate to any specific religion and it is all about being with family and enjoying food. Thanksgiving for me always works as an evaluation of how I have spent my year, and how I have gotten closer to reaching my American dreams. My first Thanksgiving after my permanent return to the US was in the year 2000. I had just arrived to the country 10 days earlier and was living with my uncle Reza. My uncle Reza is a single man who lives alone, and because of this he usually gets invited to our extended relatives' houses for dinner or lunch during the times he is in the States. That year, I remember exactly what he told me few days before Thanksgiving, "Now wait and see, because we're alone we are definitely going to get invited to many houses". Thanksgiving day arrived and not a single person called to invite us for Thanksgiving. Everyone was so preoccupied with Thanksgiving preparation that they probably forgot about us. So I spent my Thanksgiving alone with my uncle eating salad and bananas (you see, he was, as always, on diet and didn't keep anything in the house except salads and bananas).
In the following year, Naciem, my sister had joined me in the US and we were invited to my uncle Dean and aunt Valeh's house. Ever since then, we have been going to their house for Thanksgiving every year. We get to eat the biggest turkey, with the best stuffing. And after our meal is over we sit back and just talk and laugh together for hours as we eat slices of different pies.
So now, in the events of Thanksgiving I am sharing with you the recipe for my favorite pie. Enjoy and have a Happy Thanksgiving.

The recipe for the dough is adapted with few changes from from Food&Wine, and the recipe for the filling is adapted from Tyler Florence

Ingredients
2 1/2 cups all-purpose flour

1/2 teaspoon salt
1 1/2 sticks cold unsalted butter, cut into 1/2-inch dice
1/4 cup shortening (2 ounces), frozen and cut into 1/2-inch cubes
1/2 cup ice water
Filling, recipe follows
1 egg
1 tablespoon milk

Directions
In a food processor, pulse the flour and salt. Add the butter and shortening and pulse 5 or 6 times, until they are the size of peas. Drizzle on the ice water and pulse just until the crumbs are moistened.

Press the dough into a ball. Divide the dough into 2 pieces, one slightly smaller than the other. Flatten into disks, wrap in plastic and refrigerate until firm, at least 30 minutes.
Preheat the oven to 375 degrees F.
Roll the larger disk into a circle to fit a 9 to 10-inch pie plate. To transfer the pastry to the pie plate, wrap it around a rolling pin and ease it into the pie plate. Be careful not to stretch the pastry. Trim it even with the edges of the pie plate. Add the apple filling into the pastry lined pie plate. Make sure they are laying flat. Cut butter into small pieces and put on top of the filling.
Roll the remaining pastry into a 12-inch circle. Place on top of the filling. Trim off 1-inch beyond the edge of the pie plate. Crimp the edges as desired. Cut slits to allow steam to escape when baking.
Bake for 50 minutes. Whisk together the egg and milk and brush it over the dough and sprinkle with a little sugar. Bake for another 10 minutes, or until it is golden brown. Serve warm with vanilla ice cream.

Filling

1/2 cup to 1 cup all-purpose flour
6 to 7 cups apples cut into thin slices (recommended: Green Golden and Jonathans)
1 cup white sugar
1 cup brown sugar
1 teaspoon cinnamon
2 tablespoons butter

In a medium bowl combine the apples, with the brown and white sugar. Add flour, cinnamon and continue mixing until they are well coated.



پنجشنبه این هفته روز شکرگزاری در آمریکا هست. به همین مناسبت هم من دستور پای سیب رو برای شما پست کردم. حالا یک کم درس تاریخ در مورد روز شکرگزاری.
اولین گروه مهاجرانی که وارد آمریکا شدند از کشور انگلستان بودند که به آب و هوا و محصولات آمریکا آشنایی نداشتند و در نتیجه خیلی هاشون از کمبود غذا یا مریضی های مربوطه میمردن. تا اینکه یک گروه از سرخپوست های بومی اون منطقه به این مهاجران یاد دادن که چه جوری سبزیجات و محصولات بومی آمریکا مثل ذرت رو بکارند و چه جوری شکار کنند. از اون به بعد این مهاجر ها زندگیشون بهتر شد و برای اینکه قدرشناسیشون رو به سرخپوستهایی که بهشون کمک کنن نشون بدن یک مهمونی بزرگ دادن و اسم اون روز رو روز شکرگزاری گذاشتن. از اون به بعد روز شکر گذاری به طور غیر رسمی در زمانهای مختلف (معمولا توی پاییز دور و بر برداشت محصولات) توی آمریکا جشن گرفته میشد. تا اینکه حدود ۱۵۰ سال پیش آبراهام لینکلن چهارمین پنجشنبه ماه نوامبر رو روز رسمی شکرگزاری اعلام کرد. الانه آمریکایی ها روز شکر گذاری رو در کنار خانواده میگذرانند و غذاهای مخصوص این روز رو میخورن. این غذاها شامل بوقلمون، پوره سیب زمینی معمولی و سیب زمینی شیرین (بومی قاره آمریکا) و کنار غذاهای مختلف دیگر هست. دسر این روز هم انواع پای هست، که مهمترینشون پای کدو تنبل هست که همه در واقع از روی اجبار رسم درست میکنن و در حقیقت پای زیاد پر طرفداری نیست. یک خوبی روز شکر گذاری اینه که به هیچ دین یا مذهبی ربط نداره بلکه روزی هست که مردم با خانواده و دوستهاشون به سر میبرن که از این نظر خیلی مثل نوروز ما هست و به همین دلیل هم جزو محبوبترین تعطیلات آمریکایی من هست.
چون که روز شکرگزاری تقریبا یک ماه قبل از تعطیلات کریسمس هست معمولا همه خرید کادو های کریسمسشون رو از روز بعد از روز شکرگزاری شروع میکنن، به همین دلیل اکثر فروشگاه ها حراج ها رو شروع میکنن و خیلی از مغازه ها ساعت ۳ یا ۴ صبح در فروشگاهشون رو باز میکنن. مردم هم برای اینکه این حراج ها رو از دست ندن صبح زود پشت در مغازه صف میشن که از این حراج ها استفاده کنن. به همین خاطر روز بعد از روز شکر گذاری جزو شلوغ ترین روزهای خرید آمریکا هست و خیلی ها از آمار فروش این روز به عنوان تعیین وضع اقتصادی استفاده میکنن. این روز به دلیل شلوغی بسیار فروشگاه ها جمعه سیاه نامیده شده.
حالا بر گردیم به خوردنی. پای سیب محبوبترین پای من هست و به همین دلیل من تصمیم گرفتم که دستور این پای رو به مناسبت این روز پست کنم.

مواد لازم
آرد ۲/۱ ۲ پیمانه
نمک ۲/۱ قاشق مربا خوری
کره بی نمک ۱۷۰ گرم سرد به مکعب های کوچک ۱ سانتی متری خرد کنید
روغن جامد ۴/۱ پیمانه بگذارید توی فریزر یخ بزند بعد به تکه های کوچک خرد کنید
آب خنک ۲/۱ پیمانه
مواد داخل پای، برای دستور به پایین صفحه مراجعه کنید
تخم مرغ یک عدد
شیر یک قاشق غذاخوری

طرز تهیه
آرد و نمک را توی یک خرد کن بریزید و کره و روغن جامد را اضافه کنید و مخلوط کن را برای ۵ تا ۶ ثانیه روشن کنید. بعد در حالی که مخلوط را روشن کردید آب سرد را یواش یواش به خمیر اضافه کنید تا خمیر فرم بگیرد. خمیر را به دو قسمت که یکی از دیگری کمی بزرگتر تقسیم کنید و به شکل یک دیسک کمی پهن کنید و دورش را با یک نایلون بپیچید و برای ۳۰ دقیقه توی یخچال بگذارید.
فر را روی درجه ۳۷۵ فارنهایت یا ۱۹۰ درجه سانتیگراد روشن کنید تا گرم شود. خمیر بزرگتر را با وردنه باز کنید و توی ظرف پای پهن کنید (برای اینکه این کار را راحت انجام دهید خمیر را دور وردنه بپیچید و روی ظرف پای باز کنید) مواد داخل پای را توی خمیر بریزید و دو قاشق کره را روی آنها تکه تکه کنید، خمیر دوم را هم باز کنید و روی سیبها پهن کنید. گوشه خمیر ها را به هم بچسبانید و تکه های اضافه را بر دارید و دالبور دالبور کنید. روی خمیر را چند شکاف دهید تا بخار از پای خارج شود. پای را برای ۵۰ دقیقه داخل فر بگذارید. تخم مرغ را با شیر خوب مخلوط کنید و روی خمیر بزنید و کمی شکر روی آن بپاشد و بگذارید برای ۱۰ دقیقه دیگر توی فر بماند.
پای را گرم با بستنی وانیلی سرو کنید. 

برای داخل پای
آرد ۲/۱ تا ۱ پیمانه
سیب خیلی نازک ورقه ورقه شده ۶ تا ۷ پیمانه*
یک پیمانه شکر سفید
یک پیمانه شکر قهوه ای **
یک قاشق غذاخوری دارچین
دو قاشق غذاخوری کره

بهتر است از سیب سبز یا زرد استفاده کنید چون موقع پختن له نمیشوند و شکل خودشون رو از دست نمیدن*
اگر شکر قهویی در دسترس ندارید میتونین از شکر معمولی استفاده کنید**

توی یک کاسه بزرگ سیبها را با شکر ها مخلوط کنید، آرد و دارچین را اضافه کنید و مخلوط کنید تا همه سیبها با مخلوط پوشیده شوند.

  2. Hi Mariam,
    I just use whatever shotening I find availble. The actual recipe asks for lard, and since I don't normally use lard, I don't like to buy a large pack just to use 1/4 of a cup so I substitue shortening. I find crisco to work fine. I hope this was helpfull :)
