Rice Cream (Ferni) فرنی

We're almost one week into Ramadhan. The Islamic holy month in which participating Muslims refrain from eating and drinking from dawn to sunset. The Islamic calendar is a lunar calendar, and it is about 11 to 12 days shorter than the solar calendar which result in Ramadhan to migrate throughout the seasons.
I grew up in a liberal family, my mom never fasted and I have very vivid memories of my dad fasting just for couple of years and as far as I remember that was for dieting purposes. In 7th grade I had made a pledge with my friends in school to fast for 15 days and that's the only time I had fasted up until this year.
Fasting is intended to teach Muslims patience and humility, and this is what I intend to learn during Ramadhan this year.
There are special foods that are prepared during this month in each region of the Middle East that would help the participating Muslims to sustain their energy throughout the day. In our family whether we fasted or not we made a habit of making these dishes during Ramadhan. In fact one year the sous chef (aka little sister) and I made so much ferni (the showcased rice cream dish) that at the end of Ramadhan we couldn't even look at it. However time and the Delicious memories of this dish makes us yearn for it each year.
Now let me share a funny story with you about ferni. A far relative of ours had about 20 people for iftar (the evening meal when Muslims break their fast) one night during Ramadhan, and decided to make ferni for dessert. Instead of using rosewater, she mistakenly used the homemade vodka that was in her fridge. And since she was fasting she didn't get to taste her ferni before serving it. The time for iftar approached and when the guests took the first spoon of the boozed up dessert, they realized that something was wrong. The poor embarrassed hostess having taken a spoon of the ferni herself, realized her mistake and immediately put the dessert away. Now imagine alcohol is forbidden for Muslims and this poor lady had her guests break their fast with a taste of alcohol. I guess this is one mistake she will never make again.
Ramadhan Mubarak

Serves 4
Ingredients
2 cups whole milk
1/3 cup rice flour
4 tablespoons sugar
1 to 2 tablespoons rosewater

Directions
In a saucepan, whisk the milk, rice flour and sugar together. Place the saucepan over medium heat and cook for about 5 to 10 minutes, stirring constantly, until the mixture has thickened and has reached a creamy consistency. Add rosewater and stir for an additional minute.
Remove the cream from heat and ladle into individual bowls. You can serve the cream warm, at room temperature, or cold. When serving, decorate with dried rose petals or ground pistachios.


ماه رمضان شما مبارک.


ماه رمضان برای من چه تو ایران چه تو آمریکا یک حال دیگه ای داره. در تمام عمرم شاید فقط ۱۵ روز روزه گرفته باشم، اونهم برای اینکه کلاس دوم راهنمایی با دوستهام قرار گذشته بودیم که حد اقل ۱۵ روز رو روزه بگیریم. در واقع توی خونه ما کسی روزه نمیگرفت. توی ماه رمضان ظهر که از مدرسه میومدم خونه میتونستم چشم بسته خونه خودمون رو پیدا کنم، چون تنها خونه ای بود که دم ظهر ازش بوی غذا بلند میشد. هر وقت مدرسه بچه ها میفهمیدن که من روزه نیستم یک نگاه از سر تا پا بهم میکردن و میتونستم از تو چشمشون بخونم که توی این همه آدم تو توپول روزه برات واجبه.
خلاصه چه روزه میگرفتیم چه نه عادت خونمون شده بود که یک سری غذاهای ماه رمضان مثل فرنی رو مدام توی ماه بخوریم. یک سال من و دستیار جون (خواهر کوچولو) انقدر فرنی خوردیم که آخر ماه رمضان دیگه نمیتونستیم اسم فرنی رو بیاریم. ولی سال بعد دوباره همون برنامه شروع میشد.
حالا یک داستان جالب در باره فرنی. یکی از فامیلهای ما تعریف کرد که یک سال که برای افطار مهمون داشت تصمیم گرفت که برای دسر فرنی درست کنه. این خانم از اونجایی که خیلی کار داشت و دست تنها بود، متوجه نشود که به جای گلاب توی فرنی "آب شنگولی" ریخته، و از اونجایی که خودش هم روزه بود مزه فرنی رو امتحان نکرد. موقع افطار شد و مهمون ها شروع کردن به خوردن فرنی. قاشق اول رو که تو دهانشون گذاشتن متوجه شدن اشتباه این خانم بیچاره شدن. صاحبخونه بیچاره که تا حالا خودش هم از این فرنی شنگول شده میل کرده بود متوجه اشتباه خودش شد و فوری فرنی ها رو جمع کرد. تجسم کنید توی ماه رمضان روزه مهمون هاتون رو با الکل افطار کنید!!!
 
مواد لازم

شیر ۲ پیمانه
آرد برنج ۲/۱ پیمانه
شکر ۴ قاشق سوپخوری
گلاب ۱ تا ۲ قاشق سوپخوری

طرز تهیه
توی یک ظرف لعابی، شیر را با آرد برنج و شکر مخلوط کنید. ظرف را روی حرارت متوسط بگذارید و برای حدود ۱۰ تا ۱۵ دقیقه بپزید. توی این مدت فرنی را مدام هم بزنید تا ته نگیرد. هر وقت فرنی کمی غلیظ شد گلاب را اضافه کنید و بگذارید فرنی برای ۱ دقیقه دیگر بپزد.
ظرف را از روی حرارت بر دارید و توی کاسه های کوچک بریزید. روی فرنی ها را میتوانید با گل محمدی خشک یا مغز پسته رنده شده تزیین کنید.
