Rice with Herbs (Sabzi Polow) سبزی پلو


Persian New Year is around the corner and here is a recipe for Rice with Herbs or Sabzi Polow that is traditionally served on the New Years day. Herbs symbolize growth and rice symbolizes bounty.
Sabzi Polow is usually accompanied with Kuku Sabzi (below) or fish. Fish has made it to the New Years' table during the recent century. Eating fish for New Years has been adopted from the people in Gilan and Mazandaran provinces along the Caspian sea and the southern region by the Persian Gulf.

Rice with Herbs (Sabzi Polow)
Ingredients5 cups long grain rice (preferably Basmati rice)
6 teaspoons salt
1/3 cup vegetable oil
1/2 stick butter, or vegetable ghee
1 bunch each of the following herbs (wash, dry, and finely chop):
Parsley
Cilantro
Dill
Fenugreek (in case you don't have access to fresh fenugreek, you can use 1 heaping tablespoon of dried fenugreek)
Garlic chives tarreh (in case you can find these, you can substitute with green parts of green onion, or green part of one leek)

Directions
Place the rice in a large bowl and cover with water. Agitate gently with your hand and avoid breaking the rice grains, and then pour off the water. Repeat this 3 to 4 times until the rice is completely clean.
Soak the rice with water and salt for 2 to 4 hours. Add water to a large pot and bring it to a boil. Add the drained rice to the pot. Boil for 5 to 7 minutes, gently stirring with a slotted spatula. The rice must grow and cook, but not overcook. As soon as the rice is cooked, add the chopped herbs, stir quickly. Drain the rice in a large, fine-mesh colander. Make sure there is no grain of rice left in the pot. Put the pot on the stove top again and increase the heat until the bottom of the pot is dry. Add 1/3 cup of vegetable oil, and let the oil get hot. Take one spatula full of drained rice and herbs at a time and gently place it in the pot, and shape the rice into a pyramid as you go. Poke 4 or 5 holes in the rice pyramid with the handle of the spatula. Add the butter and place a dish towel or 3 layers of paper towel over pot and firmly cover the pot with its lid and reduce the heat to medium-low. Cook for 40 minutes. Using spatula place rice on a serving platter without touching the crust. Mound rice in shape of a pyramid. Then remove the crust and place it on another dish and serve on side.

مواد لازم
برنج ۵ پیمانه
نمک ۶ قاشق مربا خوری
روغن مایع ۳/۱ پیمانه
کره ۵۰ گرم
یک دسته از هر کدام از سبزیهای ذیل، یا ۵/۱ تا ۲ کیلو از همه (خوب بشویید، خشک کنید، و خورد کنید)
تره، جعفری، شوید، گشنیز، شنبلیله

طرز تهیه
برنج را خوب میشویم و میگذاریم با آب و نمک برای ۲ تا ۴ ساعت خیس بخورد. توی یک قابلمه بزرگ آب میریزم و آب را به جوش میاوریم، برنج را آبکش میکنیم و داخل آب جوش میریزیم، میگذاریم برنج کمی بپزد. هر وقت برنج کمی پخت، سبزی را اضافه میکنیم کمی هم میزنیم و آبکش میکنیم. قابلمه را دوباره روی اجاق میگذاریم، حرارت را زیاد میکنیم تا آب داخل قابلمه بخار شود، سپس روغن را توی قابلمه میریزیم. هر وقت روغن داغ شد، مخلوط برنج و سبزی را داخل قابلمه میریزیم. کره را روی برنج میریزیم، روی قابلمه را با یک حوله تمیز یا ۳ لایه حوله کاغذی میپوشانیم و در قابلمه را میگذاریم. حرارت اجاق را ملایم میکنیم و میگذاریم برنج برای ۴۰ دقیقه دم بکشد.
