Sesame Nut Candies (Posht-e Zik) سوهان کنجدی یا پشت زیک

This Monday, December 21st, marks the beginning of winter and therefore the longest night in the year. In Iran this night is referred to as Shab-e Yalda, which refers to the rebirth of sun. It is tradition that family members get together and enjoy the various snacks, recite poetry, and wait until sunrise to celebrate the victory of light over darkness (good over evil, the primal concept in the ancient Iranian religion.)
The snacks that are a must for Yalda night are: watermelon (it represents sun), pomegranate, and a special blend of nuts and dried fruits. In the northern part of Iran, where I grew up, it is also a tradition to have some sesame nut candy.
The recipe I am sharing with you is from my aunt Nayereh. She would probably call me up after I post this and tell me that my candies are thick. You see it is very easy to make these candies, up to the point where you're going to roll them. Me being a petite girl, I just couldn't press them hard enough without risking some serious wrist injury. Noosh-e jaan and be safe ;)

Ingredients

Mixture of sesame seeds, and finely chopped walnuts and almonds, 1 1/2 cups
1 cup sugar
1 tablespoon lemon juice
1 tablespoon butter or vegetable oil
Lightly toast the nut mixture until it becomes fragrant. In a medium size saucepan over medium high heat, combine the sugar with lemon juice and butter until the sugar melts. add the nut mixture to the melted sugar and combine. Pour the mixture over a greased surface and wait until it slightly cools. Using a greased rolling pin, roll the candy as thin as you can. A perfect sesame nut candy should be have a thickness of 1/16 of an inch. cut them into 2 inch diamond shapes and let them cool completely until very crisp.

شب یلدا برای من همیشه یک مزه دیگه ای داشت. با اینکه هیچ وقت تعطیل نبود و توی سن و سال بچگی آدم فقط دلش به تعطیلی خوشه ولی نمیدونم چرا هر سال نزدیک یلدا که میشد خیلی ذوق داشتم. همیشه با آذین، آزاده و صبا، سمیرا بودیم. کلی بازی میکردیم و آجیل میخوردیم و شیرینی. خسته هم که میشدیم میشستیم فال حافظ میگرفتیم و خاله فریدای بیچاره رو مجبور میکردیم برامون تفسیرش کنه. این روزا شب یالداهامون خیلی تغییرکرده. دیگه جمعمون ۲۰، ۳۰ نفری نیست، اینجوری تنها خوبیش اینه که همه وقت میکنیم تا فالمون رو بگیریم و به نسیم بخندیم وقتی شعرها رو با غلط میخونه
این دستور سوهان کنجدی (یا پشت زیک به قول مازندرانی ها) مال عمه نیره جانم هست. میدونم که هر وقت عمه جون این پست رو ببینه زنگ میزنه و ایراد میگیره که چرا خوب با وردنه بازشون نکردی که هنوز کلفت هستن. ولی من با این جثه کوتاهم اگر بیشتر از این میخواستم این سوهان ها رو باز کنم دیگه نه کتفی ازم میموند، نه مچی. به هر حال اگر آدم گردن کلفتی با بازو ماهیچه ای تو خونه دارین، پیشنهاد میکنم که مرحله باز کردن سوهان ها رو گردنش بندازین.

مواد لازم
مخلوط کنجد با گردو و بادام ریز خورد شده ۲/۱ ۱ پیمانه
شکر ۱ پیمانه
آب لیمو یا آب نارنج ۱ قاشق غذاخوری
کره ۱ قاشق غذاخوری

مخلوط کنجد و بادام و گردو خرد شده را کمی تفت دهید. شکر را با کره و آب لیمو یا آب نارنج روی اجاق بگذارد تا به مایه ای صاف تبدیل شود . بعد کنجد تفت داده شده را با شکر آب شده مخلوط کنید. و روی یک تخته چرب پهن کنید. بگذارد تا مایه کمی خنک شود، بعد با وردنه ای که چرب کردید آن را خیلی نازک بازکنید. و به شکل لوزی ببرید . بگذارد تا سوهان ها کاملا خنک و خشک شوند.
