Rice with Butternut Squash (Kadoo Polow) کدو پلو


I made this dish couple of weeks ago and I forgot to post it earlier during fall, when squash is actually in season. But I'm sure that you can still find butternut squash. This dish was made with the last butternut squash in my mother's garden.

This recipe is originally from northern Iran (the city of Babol, to be specific). Strange thing is that the first time I had this dish was about a week after I had moved back to the U.S.. My uncle and I were invited to a friend's house for lunch and his mother, a well known master in the cuisine of northern Iran had prepared it for us.

Serving size 4-6 people
Ingredients
4 cups long grain basmati rice
One large yellow onion, cut into thin slices
One medium size butternut squash, about 2 lbs. (peeled and seeds discarded,then cut into 1/2 inch cubes)
1 teaspoon turmeric
1/2 cup sugar
1/4 teaspoon black cumin (or sweet cumin)*
6 tablespoons butter or ghee (or vegetable oil)
¼ cup plus 2 tablespoons vegetable oil
One recipe liquid saffron, click here for the recipe

* You can substitute regular cumin if you can't find the sweet kind
Directions
Place the rice in a large bowl and cover with water. Agitate gently with your hand and avoid breaking the rice grains, and then pour off the water. Repeat this 3 to 4 times until the rice is completely clean. This way we are trying to extract as much starch as possible in order to get fluffy rice.Soak the rice with 8 cups of water and 4 teaspoon salt for 2 to 4 hours.

While the rice is soaking, in a saute pan brown the onion slices in vegetable oil. When the onion is golden brown add turmeric and butternut squash and saute for about 2-3 more minutes over medium heat. you don't want the butternut squash to cook through, but to just get a pale gold color.

Add about 10 cups of water to a large pot and bring it to a boil. Drain the rice then add it to the pot. Boil for 6 to 8 minutes, gently stirring with a slotted spatula. The rice must grow and cook, but not overcook. (Refer to the post Persian rice, for tips on how to prepare polow) Drain the rice in a large, fine-mesh colander. Make sure there is no grain of rice left in the pot. Put the pot on the stove top again and increase the heat until the bottom of the pot is dry. Add ¼ cup of vegetable oil, and let the oil get hot. Take one spatula full of drained rice at a time and gently place it in the pot. then add a layer of the butternut squash and onion and sprinkle with sugar and a pinch of sweet cumin. Repeat these steps, adding rice, butternut squash, sugar, and sweet cumin in alternating layers. Shape the rice into a pyramid, then pour the liquid saffron over the rice. Poke 4 or 5 holes in the rice pyramid with the handle of the spatula. Add the butter and remaining 2 tablespoons of oil over the rice. Place a dish towel or 3 layers of paper towel over pot and firmly cover the pot with its lid and reduce the heat to low. Cook for 40 minutes.

چهارده سال از عمرم رو تو شمال زندگی کردم ولی وقتی اومدم امریکا تازه کدو پلو خوردم. ولی وقتی کدو پلو رو خوردم عاشقش شدم. این کدو پلو رو با آخرین کدو حلوایی تو باغچه ملی خانم چند هفته پیش درست کردم. و قصد این رو داشتم که زودتر از اینها پستش کنم، ولی کو حواس. برای شما خواننده های عزیز که اهل شمال نیستین، باید بگم که کدو پلو یک غذای بسیار خوشمزه مازندرانی هست. که اگر بخوام دقیقشو بگم مال شهر بابل هست


مواد لازم
برنج ۴ پیمانه
یک عدد پیاز زرد درشت به شکل هلالی خرد شده
کدو حلوایی یک عدد متوسط، در حدود ۱ کیلو-
شکر ۲/۱ پیمانه
نصف قاشق چایخوری زیره
یک قاشق مربا خوری زردچوبه
زعفران ساییده شده و در آب جوش هل شده


برنج را چند بار بشورید و با ۴ قاشق مربا خوری نمک بگذارد برای ۲ تا ۳ ساعت خیس بخورد
کدو را پوست کنده و تخمهای آنرا دور بریزید سپس کدو را به شکل نگینی تقریبا درشت خرد کنید
پیاز ها را در کمی روغن سرخ کنید، سپس زردچوبه و کدو خرد شده را اضافه کنید و کمی تفت دهید. حدود ۲ تا ۳ دقیقه
یک قابلمه بزرگ را پراز آب کنید و بگذارد جوش بیاید، آب برنج را خالی کنید و برنج را به آب جوش اضافه کنید. بگذارد برنج برای ۵ تا ۸ دقیقه جوش بخورد تا برنج قد بکشد و مغز آن پخته شود. برنج را آبکش کنید، و قابلمه را دوباره روی اجاق بگذارد با حرارت زیاد آب آن تبخیر شود. سپس روغن ته قابلمه بریزید، و هر وقت روغن کاملا داغ شد، یک کفگیر از برنج را توی قابلمه بریزید. سپس کمی از مخلوط پیاز و کدو و کمی شکر و زیره روی برنج بریزید. این عمل را تکرار کنید، یک لایه برنج و یک لایه کدو و شکر و زیره تا مواد تمام شود. زعفران را روی برنج بریزید و کمی کره آب شده هم روی برنج بریزید. شعله اجاق را کم کنید و در قابلمه را با دم کنی بپوشانید و قابلمه را با آن بپوشانید. بگذارد تا برنج برای حدود ۴۰ دقیقه دم بکشد.

    1. سلام هم نام عزیز، انار تیم به مازندرانی میشه دونه انار. خیلی مازندرانی ها کنار کدو پلو دونه انار خشک شده میریزن، چون زیر دندون قرچ قروچ میکنه میگن (چکه چکه) که اون هم به گویش مازندرانی هست.
