Stuffed Grape Leaves (Dolmeh Barg-e Mo) دلمه برگ مو

We grew up mostly among Mr. Dad's side of the family in northern Iran. The Master's relatives were originally from Tabriz, a city in the north western region of Iran. While throughout the years most of them had migrated to Tehran, along with their sweet accent they kept their refined taste in throwing elegant parties which the women from Tabriz are famous for.
I first experienced these lavish parties when my uncle got married. There is a tradition in Iran for the bride's and groom's extended relatives to throw parties in honor of the newly weds after they have married, to introduce them to the extended relatives. These parties are called "pa-gosha". When my uncle got married, I was about eleven years old, but I remember the exact details of the table spreads at my mother's relatives' house for the pa-gosha parties they arranged in honor of my uncle and his bride. Large trays of foods I had not seen before lay on the table. They were each unique and different, yet built a harmonious dinner table I had not seen prepared by a home cook before. From then on I could attest to the exquisite taste and entertaining skills of Tabrizi Women.
Dolmeh is a very popular dish in north western region of Iran, and the recipe I am sharing with you here is the Master's recipe which she learned from her late aunts.
Throughout the Middle East and the Mediterranean region people have always consumed some sort of a stuffed leaf or vegetable, but given its name, dolmeh is probably originally a Turkish food (which explains it being popular in north western Iran, since that's the part of Iran that borders Turkey) which has become very popular in Iran, Greece, and the rest of the Middle East and the Caucasus. And while it looks almost the same in all these countries, the stuffing is slightly different in each. Dolmeh is also normally prepared in the shape of a cigar, but in Iran it is wrapped like a small parcel.
I always take pride in the fact that I never got to open a can or taste a Ramen noodle during the time I lived in the United states alone. Though I have to admit that out of desperation for some dolmeh, I did buy a can of dolmeh once and after taking a bite of one I couldn't bring myself to finishing the rest and just threw the whole thing in the trash. After tasting the real thing I can never go to eating the canned version.


Ingredients:
3/4 cup yellow split peas
1 1/2 cup rice
1 yellow onion, thinly sliced
1/2 teaspoon turmeric
3/4 lb. ground beef or lamb
3 heaping tablespoons tomato paste
Juice of 2 lemons, divided
1 bunch each of parsley, savory (marzeh), garlic chives (tarreh), mint, tarragon, cilantro, green onions, stems removed, washed and finely chopped *
salt and pepper
60 to 80 fresh or jarred grape leaves**
2 tablespoons butter

*You can substitute each bunch of  fresh herbs with 1 tablespoon of dried herb.
** If using fresh grape leaves, pick small and tender ones.

Directions
In a small bowl soak the rice in 3 cups of water and 1/2 teaspoon salt for about an hour.
Wash and rinse the split peas and soak in 1 1/2 cups water and 1/2 teaspoon salt for an hour. Cook for 10 minutes until they are partially cooked.
If using fresh in season grape leaves, nip off the little stem and wash and dry them.
In a skillet, saute the sliced onions in 3 tablespoons of vegetable oil. Add turmeric and ground meat and brown the meat as well. Drain rice and split peas and add them to the meat along with the herbs, tomato paste, juice of one lemon and salt and pepper. Mix the stuffing thoroughly.
Put some leaves at the bottom of a medium pot in a single layer.
Place a grape leaf on top of a wooden board with the vein side up and top with 1 tablespoon stuffing. Fold each end of the leaf over the stuffing to make it look like a little package. Place in the pot, seam side down. Repeat, filling all the leaves, and placing them very close to each other.
Pour about 2 cups of water and the remaining lemon juice over the stuffed leaves and dot with butter. Set a heatproof plate on top of the stuffed grape leaves. Cover and bring to a boil, then cook over medium low heat for about 2 hours, until the leaves are tender and stuffing is cooked through.
Serve in a platter, hot, warm or at room temperature with bread and yogurt.












وقتی که ایران بودیم تو ساری دور و بر فامیلهای آقای پدر بزرگ شدیم. کدبانو اکثر فامیلهاش اهل تبریز هستن و با اینکه همه به تهران مهاجرت کردن ولی در کنار لهجه شیرین آذری سلیقه فوق العاده عالی مهمانداری و پذیرایی رو که خانم های تبریزی درش شهرت دارن رو نگه داشتن. 
من اولین خاطره ای که از این مهمونی ها دارم، وقتی بود که دایی ام تازه ازدواج کرده بود و همه خودش و نو عروسش رو پا گشا میکردن. حدود ۱۱ سالم بود ولی جزیات میز های شام با غذاهای رنگارنگ از خاطرم نمیره. دیس های بزرگ پر از غذاهایی که تو عمرم ندیده بودم روی میز چیده شده بودن. هر غذا به نوع خودش بی نظیر و در عین حال هماهنگ با باقی غذاها بود. از اون به بعد با کمال اطمینان دستپخت عالی خانومهای تبریزی رو تایید میکنم. 
در جاهای مختلف خاورمیانه و مدیترانه در طول سالها غذاهای زیادی به شکل دلمه لای برگ گیاه ها درست میشد. ولی از اونجایی که اسم این غذا ترکی هست ما هم فرض میکنیم که اصلیت این غذا مال ترکیه باشه. توی یونان و حتی ترکیه اکثرا دلمه رو به شکل یک سیگار میپیچن ولی بستگان خانم مادر همیشه دلمه رو به شکل بسته های کوچیک میپیچیدن. داخل دلمه هم توی هر منطقه با مواد مختلفی پر میکنن و حتی تو ایران هم تو شهر های مختلف مواد مختلف برای پر کردن دلمه استفاده میشه. این دستوری که براتون گذاشتم رو کدبانو از عمه هاش یاد گرفته.
توی مدتی که آمریکا تنها زندگی میکردم، بزرگترین افتخارم این بود که هیچ وقت در قوطی کنسرو رو باز نکردم و همیشه سعی کردم با وجود کار زیاد و دانشگاه غذای سالم بخورم، ولی باید اعتراف کنم که یک بار از دلتنگی برای دلمه زدم به سیم آخر و رفتم یک کنسرو دلمه خریدم. چشمتون روز بد نبینه، یک گاز از یک دلمه زدم و باقی کنسرو رو دور ریختم. آدم کافی هست که یک بار طعم دلمه خونگی رو بچشه، دیگه نمیتونه به مدل کنسرویش لب بزنه.

مواد لازم
لپه  ۳/۴ پیمانه
برنج ۱/۲ ۱ پیمانه
پیاز زرد ۱ عدد متوسط خرد شده
زرد چوبه ۱/۲ قاشق مربا خوری
گوشت چرخ کرده ۷۵۰ گرم
رب گوجه فرنگی ۳ قاشق سوپخوری پر
آب  ۲  لیمو
یک دسته متوسط از هر کدام از سبزیهای ذیل، پاک شده، شسته و خرد شده:
جعفری، مرزه، تره، نعناع، ترخان، گشنیز و پیازچه
نمک و فلفل
حدود ۶۰ الی ۸۰ برگ مو تازه نازک یا در قوطی
کره ۲ قاشق غذاخوری


طرز تهیه
در یک کاسه کوچک برنج را در ۳ پیمانه آب و نصف قاشق غذاخوری نمک خیس کنید.
در یک قابلمه کوچک لپه را در ۱/۲ ۱ پیمانه آب و نصف قاشق غذاخوری نمک برای ۱ ساعت خیس کنید، سپس لپه را برای ۱۰ دقیقه بپزید تا نیم پز شود.
اگر برگ مو تازه استفاده میکنید، ساقه برگ مو را بچینید و برگ ها را خوب بشوید و خشک کنید. 
در یک تابه پیاز ها را در ۳ قاشق غذاخوری روغن سرخ کنید. حرارت را روی کم تا متوسط بگذارید و گوشت چرخ شده را با زردچوبه  اضافه کنید و گوشت را نیز سرخ کنید. برنج و لپه را آبکش کنید و به همراه سبزی ها، رب گوجه فرنگی، آب یک لیمو، و نمک و فلفل اضافه کنید. تمام مواد را خوب مخلوط کنید.
چند برگ مو را کف یک قابلمه متوسط قرار دهید. 
یک قاشق غذاخوری را وسط یک برگ مو بریزید و هر طرف برگ را روی مخلوط تا کنید تا شکل یک بقچه کوچک شود. دلمه را کف قابلمه بگذارید. این کار را با باقی برگ ها تکرار کنید و دلمه ها را کنار هم در قابلمه بچینید.
حدود ۲ پمانه آب را با باقی آب لیمو روی دلمه ها بریزید و کره را تکه تکه کرده روی دلمه ها بریزید. یک بشقاب مقاوم به حرارت را روی دلمه ها بگذارید و در قابلمه را بگذارید و روی حرارت بالا به جوش بیاورید. سپس حرارت را به متوسط الی کم پایین بیاورید و بگذارید دلمه برای حدود ۲ ساعت دیگربپزد تا برگ و برنج داخل برگ کاملا بپزند. 
دلمه ها را داغ، گرم یا سرد با نان و ماست سرو کنید.

Oven Baked Gyro Meat with Tzatziki Sauce ساندویچ یونانی ییرو با سس زدزیکی

Every member of our family has a way of saying happy mother's day to the Master. I always try to make her her favorite dishes, Camera Girl makes jello for her (there is a story behind this which I will share with you later) and treats her with some frozen pineapple and mango frozen yogurt, Sous Chef brings flowers, and Mr. Dad surprises her with some new cloths (yes, Mr. Dad has quite the taste in ladies clothing!)
Since the master is no ordinary mom, she doesn't get that excited over fancy brunches, tea parties, and such. As the master is a proud carnivore, what brings sparkle in her eyes is the sight of a glistening kabob being slipped of the skewer, a big chunk of charred juicy steak, or slices of this gyro meat covered with tzatziki sauce and wrapped in a warm pita. 
This wrap has become a staple in our house specially during summer time. All the components of the sandwich is prepared in separate dishes and set on the table ready to be assembled into a wrap per each person's liking. I use Alton Brown's recipe for the oven baked method but his recipe includes a rotisserie version as well which due to the lack of a rotisserie I haven't tried yet.

Recipe adapted with minor changes from Alton Brown's Gyro Meat with Tzatziki Sauce

Serves 6 to 8 people

Ingredients
1 medium onion, finely chopped or shredded
1 pound ground lamb
1 pound ground beef
1 tablespoon finely minced garlic
1 tablespoon dried marjoram
1 tablespoon dried ground rosemary
2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Tzatziki Sauce, recipe follows
Pita bread, crumbled feta, chopped tomatoes, and sliced onions for the sandwich

Directions
Process the onion in a food processor for 10 to 15 seconds and turn out into the center of a tea towel. Cather up the ends of the towel and squeeze until almost all of the juice is removed. Discard juice.
Return the onion to the food processor and add the lamb, beef, garlic, marjoram, rosemary, salt, and pepper and process until it is a fine paste, approximately 1 minute. Stop the processor as needed to scrape down sides of bowl.
Preheat the oven to 325 degrees F.
Place the mixture into a loaf pan, making sure to press into the sides of the pan. Place the loaf pan into a water bath and bake for 60 to 75 minutes or until the mixture reaches 165 to 170 degrees F. Remove from the oven and drain off any fat. Place the loaf pan on a cooling rack and place a brick wrapped in aluminum foil directly on the surface of the meat and allow to sit for 15 to 20 minutes, until the internal temperature reaches 175 degrees F. Slice and serve on pita bread with tzatziki sauce, chopped onion, tomatoes and feta cheese.

Tzatziki Sauce:
16 ounces plain strained yogurt
2 medium cucumber, peeled, seeded, and finely chopped
Pinch kosher salt
4 cloves garlic, finely minced
1 tablespoon olive oil
4 teaspoon red wine vinegar
10 mint leaves, finely minced

Place the chopped cucumber in a tea towel and squeeze to remove the liquid; discard liquid. In a medium mixing bowl, combine the drained yogurt, cucumber, salt, garlic, olive oil, vinegar, and mint. Serve as a sauce for gyros.
Store in the refrigerator in an airtight container for up to a week.
هر سال روز مادر هر عضو خانواده به نحو خودش از کدبانو قدردانی میکنه. اینجانب سعی میکنم غذای محبوب خانم مادر رو درست کنم، عکاس باشی ژله میگیره (یک داستانی پشت این ژله هست که سر فرصت براتون تعریف میکنم) با ماست یخ زده با طعم آناناس و انبه، دستیار آشپز گل میگیره و آقای پدر هم یک دست لباس (بله، آقای پدر سلیقه بسیار خوبی در مورد لباس خانمانه داران!)
از اونجایی که خانم مادر عاشق غذاهای گوشتی هستن، غذاهای شیک و تجملی زیاد به چشمشون نمیاد. یک سیخ کباب براق در حال بیرون کشیدن از سیخ، یک استیک برشته شده، یا این ساندویچ ییرو آغشته به سس زدزیکی و پیچیده شده در نان عربی، از جمله غذاهایی هستن که برق به چشم کدبانو میارن.
ییرو یک ساندویچ گوشت یونانی هست که همراه سس زدزیکی که در واقع خیلی شبیه ماست و خیار خودمون هست با پنیر فتا و پیاز و گوجه نوش جان میشه. این غذا الان چند سالی میشه که جزو غذاهای تابستونی ما شده. همه مواد ساندویچ جدا تو ظرف های مختلف روی میز چیده میشن و هر کس به شکل دلخواهش ساندویچ رو درست میکنه. گوشت ییرو رو در واقع مثل کباب ترکی به یک سیخ مثل یک استوانه میپزن و گوشت رو از روی سیخ میتراشن. ولی در نبود سیخ کباب ترکی گوشت رو میتونین توی فر هم درست کنین.

مواد لازم برای ۶ الی ۸ نفر
یک عدد پیاز معمولی  خرد شده
گوشت گوسفند چرخ کرده، ۵۰۰ گرم
گوشت گاو چرخ کرده، ۵۰۰ گرم
سیر خرد شده، ۱ قاشق غذاخوری
مرزنجوش خشک، ۱ قاشق غذاخوری
رزماری خشک خرد شده، ۱ قاشق غذاخوری
نمک، ۲ قاشق مربا خوری سر خالی
فلفل، نصف قاشق مربا خوری
سس زدزیکی، دستور در ذیل 
نان عربی، گوجه فرنگی خرد شده، پیاز قرمز خرد شوه، و پنیر فتا (صبحانه) خرد شده برای ساندویچ

طرز تهیه 
پیاز را در خرد کن برای ۱۰ تا ۱۵ ثانیه چرخ کنید بعد آن را روی یک پارچه تمیز بریزید. گوشه های پارچه را جمع کنید و پیاز را بچلانید تا آب آن کاملا گرفته شود. آب پیاز را دور بریزید.
پیاز را به یک کاسه بزرگ منتقل کنید و گوشت ها را با سیر، مرزنجوش، رزماری، نمک و فلفل مخلوط کنید. مخلوط گوشت را برای ۱ دقیقه چرخ کنید تا گوشت حالت چسبندگی بگیرد. اگر چرخ کن کوچک بود در نوبت های مختلف گوشت را چرخ کنید.
فر را روی درجه ۳۲۵ فارنهایت یا ۱۶۰ سانتیگراد روشن کنید تا گرم شود.
مخلوط گوشت را در ظرف مناسب فر با ارتفاع بریزید و همه گوشه های ظرف را پر کنید. ظرف گوشت را به یک ظرف بزرگتر منتقل کنید و در ظرف بزرگتر آب جوش بریزید تا حدی که آب تا نصف ارتفاع ظرف گوشت بالا بیاید. گوشت را در فر به مدت ۶۰ الی ۷۵ دقیقه بپزید. بعد از اینکه گوشت پخت آن را از فر خارج کنید و آب توی ظرف را خالی کنید. دور یک سنگ بزرگ یا آجر تمیز فویل بپیچید و آنرا روی گوشت به مدت ۱۵ الی ۲۰ دقیقه بگذارید. گوشت را از ظرف خارج کنید و روی یک تخته به قطعات نازک ببرید. گوشت ییرو را با سس زدزیکی پیاز خرد شده، گوجه فرنگی خرد شده، و پنیر فتا لای نان عربی بپیچید و نوش جان کنید.
سس زدزیکی:
ماست چکیده، ۵۰۰ گرم
خیار متوسط پوست گرفته شده و ریز خرد شده، ۲ عدد
نمک، نوک قاشق چایخوری
سیر خرد شده، ۴ حبه 
روغن زیتون، ۱ قاشق سوپخوری
سرکه قرمز، ۴ قاشق مربا خوری
نعناع، حدود ۱۰ برگ خرد شده

خیار خرد شده را روی یک پارچه تمیز بریزید، گوشه های پارچه را جمع کنید و آب خیار را بگیرید. آب خیار را دور بریزید و خیار را به یک کاسه منتقل کنید. ماست، نمک، سیر، روغن زیتون، سرکه قرمز و نعناع خرد شده را اضافه کنید و مخلوط کنید. به عنوان سس برای ییرو استفاده کنید. 
این سس را میتوانید در یک ظرف در بسته درون یخچال برای یک هفته نگهداری کنید.

Tiramisu تیرامیسو

The recipe for this tiramisu is from a book which has a very sentimental value for me. During the time that Camera girl and I lived in the States alone, about 10 years ago, we were financially broke, and spending money on things that were not essential to our daily life was not an option. We each held two jobs, we shared a full time job at a drugstore, and on the weekends we worked separately in different stores.
As part of the newly enforced dress code policy in our shared job we had to purchase some black pants. We went to an off-price department store to buy the pants, and while waiting in line at the checkstand, Camera girl started to skim trough this book which she found laying on a shelf. The mouth watering pictures in the book were so tempting to the eyes of this teenager forced to eating her sisters not so great cooking at the time, that she pleaded me to buy it.
The $8 book was a luxury purchase for us at the time, and after years, as our prospects improved so did my cookbook collection. But this book has a special place in my heart, as it reminds me of our accomplishments and the hardship we overcame.

Recipe adapted from The Italian Kitchen

Ingredients
3 eggs, separated
2 cups mascarpone cheese, at room temperature
1 teaspoon vanilla sugar
3/4 cup cold, very strong black coffee
1/2 cup Kahlua or other coffee flavored liqueur
18 savoiardi (Italian sponge fingers)
sifted unsweetened cocoa powder and grated bittersweet chocolate, to finish

Directions

  1. Put the egg whites in a grease-free bowl and beat with an electric mixer until stiff and in peaks.
  2. Mix the mascarpone, vanilla sugar and egg yolk in a separate large bowl and beat with the electric mixer until evenly combined. Fold in the egg whites. Spread a few spoonfuls of the mixture in the bottom of a large serving bowl.
  3. Combine the coffee and liqueur in a shallow dish. Dip a sponge finger in the mixture, turn it quickly so that it becomes saturated but does not disintegrate, and place it on top of the mascarpone mixture in the bowl. Add five more dipped sponge fingers, placing them side by side.
  4. Spoon in about one-third of the remaining mascarpone mixture and spread it out. Make more layers in the same way, ending with mascarpone. Level the surface, then sift cocoa powder over it. Cover and chill overnight. Before serving, sprinkle with more cocoa and the grated chocolate.

حدود دو سه سال پیش وقتی‌ این بلاگ رو شروع کردم، هدف اصلیم این بود که از این طریق دستور غذا‌هایی‌ رو که دوستان درخواست می‌کنن رو راحت بهشون برسونم. الان حدود یک سالِ که دختر عمه عزیزم از من دستور تیرامیسو خواسته و دختر دایی هواس پرتش تازه داره دستور این دسر رو پست میکنه. خلاصه ستاره عزیزم بالاخره این دستور رو دارم برات پست می‌کنم.
دستور این تیرامیسو از یک کتاب آشپزی هست که خیلی‌ ارزش معنوی برای من داره. حدود ۱۰ سال پیش که عکاس باشی‌ و من تو آمریکا تنها زندگی‌ میکردیم وضع مالی زیاد جالبی‌ نداشتیم و تو همه خرید هامون صرف جویی میکردیم. یک روز بخاطر قانون لباس سر کارمون مجبور شدیم بریم فروشگاه تا شلوار مشکی‌ بگیریم و تو صف پرداخت بودیم که عکاس باشی‌ چشمش به این کتاب افتاد و عکسهای رنگارنگ غذا به چشم این نوجوان بی‌چاره که مجبور به خوردن دستپخت نه چندان عالی‌ خواهرش بود آنچنان خوشمزه اومد که به من اصرار کرد که این کتاب رو بخریم.
این کتاب ۸ دلاری تو اون موقع برای ما یک خرید گرون بود. و بعد از سالها همینطور که وضععمون بهتر شد کلکسیون کتاب آشپزی من هم بزرگتر شد، اما این کتاب بخاطر اینکه من رو به یاد سختی‌هایی‌ که پشت سر گذاشتیم میندازه برای من ارزش دیگه یی داره. 
قابل ذکر هست که تیرامیسو یک دسر ایتالیایی هست که معنیش به ایتالیایی می‌شه "من رو بقاپ" یا "من رو انتخاب 
کن"، که منظورش در واقع این هست که این دسر انقدر خوشمزست که خودش فریاد میزانه که من و بیا بگیر :د

مواد لازم:
تخم مرغ، ۳ عدد، سفیده و زرده جدا
پنیر مسکرپنه، ۲ پیمانه 
شکر وانیل، یک قاشق مربا خوری
قهوه آماده سرد، ۳/۴ پیمانه
مشروب kahlua  یا ودکا یا ویسکی، ۱/۲ پیمانه*
حدود ۱۸ عدد بیسکوییت اسفنجی ایتالیایی
پودر کاکائو و  شکلات  تخته یی رنده شده برای تزیین

* استفاده از مشروب اختیاری هست، ولی‌ کمک می‌کنه که طعم قهوه قویتر بشه. مشروب رو به اندازه دلخواه استفاده کنید. اگر طعم مشروب رو زیاد دوست ندارین می‌تونین کمتر استفاده کنین. 


طرز تهیه:
۱. سفیده تخم مرغ را توی ظرف تمیزی انقدر با همزن بزنید تا سفت و سفید شود.
۲. توی یک کاسه جدا پنیر مسکرپونه را با زرده تخم مرغ و شکر وانیلی با همزن بزنید تا مواد خوب مخلوط شوند. سفیده را اضافه کنید و با قاشق آرام مخلوط کنید. چند قاشق از این مخلوط را ته ظرفی که میخواهید سرو کنید بریزید و پخش کنید.
۳. قهوه و مشروب را در یک صرف کم عمق مخلوط کنید و خیلی سریع دو طرف بیسکویت ها را به این مخلوط آغشته کنید و روی مخلوط مسکرپونه بچینید. این کار را با چند بیسکویت دیگر تکرار کنید و بیسکویت ها را کنار یکدیگر بچینید.
۴. حدود یک سوم از مخلوط باقی مانده مسکرپونه را روی بیسکوییت ها بریزید و پخش کنید و لایه های بیسکویت و کرم را بترتیب روی هم درست کنید. لایه آخر باید پنیر مسکرپونه باشد. پنیر را خوب صاف کنید. و پودر کاکاو را روی پنیر بپاشید و با شکلات تخته ای رانده شده تزیین کنید.
